Bacon & Eggs with Herbed Sweet Potato Home Fries

Spring is here, and the chickens are laying so many eggs that we must eat them every day to keep up. There really isn't anything that goes better with eggs than bacon!

It's also nice to switch things up a little and serve up some sweet potato home fries. Sweet potatoes are such a nutritional powerhouse too. Win, win!

This recipe should feed two hungry people.

Ingredients

  • 2 large sweet potatoes, cut into 1/4 in rounds
  • 3-4 eggs
  • 3 or 4 tbs goat cheese or soft cheese like chèvre
  • 5 pieces of bacon
  • A few chives, coarsely chopped
  • 2 tbs cooking oil or lard
  • Salt and pepper

Recipe

Preheat your oven to 350 and cook the bacon first. I like to cook it in the oven because it cooks evenly. It doesn't take long, 5-10 minutes depending on the thickness.

Next, heat up your skillet on medium heat, add 1 tbs oil until shimmering and coating your skillet. Put in your sweet potatoes, sprinkle with salt and cover with a lid for 10 mins, reduce your heat to med/low. Uncover sweet potatoes, stir and add the rest of the oil, cook for 10 more minutes until tender, then scoot your taters to the side and crack your eggs in the middle, making a nest. Cook on med/low until the whites of the eggs are firm.

Sprinkle with chives, goat cheese, and bits of bacon.
