Harvest Pork Chops with Grilled Pears

Pork chops with caramelized grilled fruit

It's here again! Harvest time. The time of year when plums, peaches, apples and pears are at the peak of deliciousness.

We often find ourselves with a lot of fruit all at once and this is a nice way to use up whatever you have around or is looking the absolute best at the market.

Ingredients

  • Three or four plums, peaches, pears or apples, cut in half or quarters
  • Two large pork chops
  • Salt and pepper
  • Two to three tablespoons of butter

Recipe

Salt and pepper pork chops thoroughly on both sides anywhere from 15 mins to 24 hrs prior to cooking. Heat up your carbon steel skillet on medium/high heat and add your butter. Once the butter is melted, sear your chops on either side for about 3-5 minutes. Turn your heat down to medium low and cook chops for another 10 minutes, flipping once or twice.

Now add your fruit, face down in your skillet, adding a little more butter if they start to stick. Cook chops and fruit for another 5 minutes until the fruit begins to caramelize. Remove fruit once the juices are flowing and the edges are brown to blackish. This will vary based on the sugar content of the fruit and how juicy it is.

Cook your pork chop until the internal temp is 160 degrees. Remove from heat. Cover in your seared fruity deliciousness and enjoy with a glass of wine. Bon Appetit!
